Alexandria is two and a half hours from Cairo and feels considerably further. It faces the Mediterranean rather than the desert, it was Greek before it was anything else, and the weather is milder for it. The Citadel of Qaitbay stands on the foundations of the Pharos lighthouse, using its stone. The Catacombs of Kom el Shoqafa are a Roman-era tomb complex cut down through rock with Egyptian gods carved in Roman dress. The Bibliotheca Alexandrina is the modern answer to the library that burned. It is the easiest day on this list and the best one for a hot month.

How the day runs
Morning — the drive
An early start and roughly two and a half hours north.
Late morning — Qaitbay and the corniche
The citadel on the harbour, and the seafront it stands at the end of.
Midday — lunch
Seafood by the water.
Afternoon — the catacombs and the library
Kom el Shoqafa, then the Bibliotheca Alexandrina, before the drive back.
City walking on flat ground, with a spiral staircase down into the catacombs that is the only real effort.

For the headline sites, comfortably. Alexandria rewards longer, but a day covers the citadel, the catacombs and the library without rushing, and gets you back to Cairo the same night.
